With the kids back in school, it’s more important then ever to have good food on the table. We aren’t able to be with them to help make good food choices during the day, but we can do our best to make sure they eat well at home.
Chances are you’ll be helping with homework, too, so a meal that’s ready in 30 minutes is a huge plus, and that’s exactly what this Spicy Peach Pork is. Its spicy-sweet flavor packs a punch, but can be adjusted to your family’s taste.

- 1 lb thin boneless pork chops, cut in bite-sized pieces
- 1/8 C taco seasoning
- 1 Tbsp oil
- 1/4 C peach preserves
- 1 8 oz jar salsa
- In a zip-close bag, combine pork and taco seasoning; shake until well coated
- Heat oil in a saute pan; brown pork
- Stir in preserves and salsa; cover and simmer for 15 min
- Serve over rice
