Coconut Cream Cheese Pie {i love} my disorganized life

Happy Pi Day!

Today is March 14th {3.14} which means one thing- Pi Day  {Pi = 3.14159}. To celebrate, not only did I make you a coconut cream cheese pie, but I’ve gotten together with some other incredible bloggers who made pies for you as well!

Of course, any day is a reason to celebrate with pie, but we’re also celebrating the fact that my friend and fellow blogger, Julie from White Lights on Wednesday, is getting married, and on Pi Day 2015, no less!

When Julie first invited me to join in on the Pi Day fun, I immediately knew what kind of pie I wanted to make. It’s similar to the very popular pineapple cream pie I made last year for Pi Day, but with a few tweaks.

I’ll be honest, I don’t bake pies very often, but I have a couple of others I’ve been wanting to try out, so you may be seeing more soon!

Coconut Cream Cheese Pie

Yields 8-10

Coconut Cream Cheese Pie

2 hr, 15 Prep Time

2 hr, 15 Total Time

Ingredients

    Crust
  • 2 C graham cracker crumbs
  • 1/2 C melted butter
  • 2 Tbsp sugar
  • Filling
  • 3- 6 oz packages of cream cheese {room temperature}
  • 14 oz can sweetened condensed milk
  • 2 Tbsp lemon juice
  • 2 Tbsp coconut rum
  • 3 egg yolks
  • 1 1/2 C sweetened coconut flakes

Instructions

    Crust
  1. Combine all ingredients and mix well
  2. Using your hands, press on bottom and up sides {about 2 inches} of a 9 inch spring form pan
  3. Let set in freezer while preparing filling
  4. Filling
  5. Beat cream cheese until creamy
  6. Add sweetened condensed milk, lemon juice, rum & eggs and beat until combined
  7. Stir in coconut flakes
  8. Pour into prepared pan and chill in refrigerator until set {about two hours}
  9. Top with whipped cream, if desired

    This recipe sound wonderful. I do not have coconut rum, could I use coconut extract instead and if so, how much? Thanks 🙂

    This looks amazing and I plan on making it this weekend. Question, though – I’ve only seen cream cheese in blocks of 3 ounces or 8 ounces, not 6 ounces. I can of course use six 3-ounce blocks to get 18 ounces, but I wanted to verify that there wasn’t a typo and you meant 8 ounces. Thank you!!

      No type- o, you’ll just have some cream cheese left over- I used 3 8oz and used the leftover for bagels. You could always use double the amount in 3 oz packages. Sorry for the confusion, I should specify that!

    This recipe looks so good. I love coconut cream pie. But aren’t you
    supposed to cook anything with raw eggs in it?? This has egg yolks. When I read
    the recipe at first, I was sure you were going to bake it or cook the filling in a double
    boiler.

      The lemon juice in the pie takes care of that, it’s totally safe, but I see your concern.
