In the twelve days of Christmas series #1 , I gave you a little of the history of the song “The Twelve Days of Christmas”, and, in the twelve days of Christmas series #2 I told you about a wonderful holiday tradition you can do with your family or friends. I also gave you the first printable and gift to give.

Today, we continue with the eighth day of gift giving.

My husband and I met while attending the same church. There was a group of several sweet ladies there and they had put together a cookbook, which they gave to all the newly married couples.
When we got married, we were one of those couples. We moved and left the church less than two years later, but I still remember the kindness and love of those women and I still have that cookbook.
One of the ladies in particular was a woman named Joan {along with her husband Ron and their daughter Krista}. Joan was the type of person who would always smile and say hello and was generous with hugs.
Even though we were not fortunate to see her again, I have reconnected with her wonderful daughter.
Krista and I communicate often. If I needed her, I know she’d be there.
The base for this recipe was one that Joan had contributed to my special cookbook. I hope it honors her memory and conveys to Krista how highly I think of her and cherish our friendship.

 

Frosted Peppermint Sugar Cookies

Ingredients

  • 1 C powdered sugar
  • 1 C white sugar
  • 1 C butter, softened
  • 1 C vegetable oil
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4-1/2 tsp peppermint extract {1/4 tsp for a mild taste, 1/2 tsp for a stronger flavor}
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 4 C flour
  • 7 candy canes, crushed, divided
  • Vanilla or cream cheese frosting

Instructions

  1. Preheat oven to 350ยบ
  2. Cream sugars, butter and oil
  3. Add eggs and extracts, beat until fluffy
  4. Sift dry ingredients and mix into butter mixture
  5. Stir in 6 crushed candy canes
  6. Roll dough into balls the size of whole walnuts and place on ungreased cookie sheets
  7. Bake for 10 min
  8. Cool for 2 min before removing to wire cookie racks to cool completely
  9. If desired, frost and sprinkle with remaining crushed candy canes
